(3)長期保存性の向上をめざして!

 食品を長期にわたり保存する手段として冷凍保存(冷凍食品)は有効です。冷凍保存は動物の胚や植物組織の保存にも使われています。これら生体材料は食品に比べ冷凍に対する感受性が高く、凍結耐性を解明するための有効なモデルとなります。そこで、食品冷凍技術のより一層の改善を目指し、凍結保存耐性を解明するために植物細胞や組織の凍結保存を行っています。

これらの実現に向け、植物培養細胞や組織(スギナ、キノアなど)、また食品素材である餡などを実験材料として、生理生化学レベル・細胞分子生物学レベル・形態分析学レベルでの研究を行っています。
